Chourico Potato Stew

Cozy up with a hearty bowl of Chourico Potato Stew. A perfect comfort food for the winter season, made with Amaral’s Chourico and Antonio’s Paprika and Bay Leaves.

Chourico Potato Stew

Chourico Potato Stew

 

Ingredients:

o   3 tablespoons extra-virgin olive oil

o   1 white onion, chopped

o   1 teaspoon salt

o   1 teaspoon pepper

o   1 package of Amaral’s Chourico Sausage (16 oz), sliced

o   3 gloves garlic, minced

o   4 cups creamer potatoes, halved

o   4 cups chicken broth

o   1 teaspoon Antonio’s Paprika

o   6 cups red Swiss chard, stems removed, chopped (roughly 1 small bunch)

o   Chopped fresh parsley for garnish

o   Toasted bread for serving


Directions:

o   Heat the olive oil in a large pot over medium-high heat

o   Add in chopped onions, season with ½ teaspoon salt, and cook until soft and slightly brown, stirring occasionally (roughly 5 minutes)

o   Add sliced Amaral’s Chourico and cook until lightly browned around the edges, stirring occasionally (roughly 5 minutes)

o   Add garlic, ½ teaspoon of salt, and potatoes and cook, stirring occasionally (roughly 5 minutes- make sure potatoes are well coated)

o   Add chicken broth, Antonio’s Bay Leaves, and Antonio’s Paprika and bring to a simmer

o   Reduce heat to medium and cook for 12 minutes

o   Add Swiss chard, cover, and cook until the potatoes are tender, and the chard is wilted, stirring occasionally (roughly 5 minutes)

o   Ladle into bowls, top with chopped fresh parsley, and serve with toasted bread

o   Enjoy!
