Roasted Hoto's Feta & Tomato Pasta Recipe
Ingredients:
1 box of cavatappi pasta (Any shape will do!)
20 oz cherry tomatoes
4 cloves of garlic, finely chopped
1 tsp. red pepper flakes
1 cup of fresh basil leaves
salt & pepper
Directions:
Preheat oven to 400°
Add tomatoes, olive oil, and salt to a baking dish and toss until tomatoes are evenly coated
Place the block of Hoto’s Feta Cheese in the center of the tomatoes and top with a drizzle of olive oil and a teaspoon of red pepper flakes
Bake for 30 minutes
While the tomatoes and feta bake, cook the pasta based on the box instructions and strain, saving 1 cup of pasta water for later
After 30 minutes, turn the oven up to 450° and bake for another 10 minutes, or until the feta and tomatoes have browned
Once the feta and tomatoes have browned, remove from the oven, add the garlic and basil, and stir
Add in your pasta and stir
Season with salt & pepper
Optional: If your sauce is dry for your liking, add in 1/4-1/2 cup pasta water and stir
